Our tonkotsu (pork bone) broth is made with highest quality ingredients and pork bones. Our entire cooking process takes more than 12+ hours that results in a rich and creamy white broth. We prepare each and every topping, using only the freshest and highest quality ingredients.

We only use 100% certified Berkshire (Kurobuta pork), recognized for it’s juiciness, superior taste and tenderness. Our pork comes from a number of small farms in Iowa where consistent breeding and quality control is of the upmost importance. 

We constantly strive to research and discovering latest emerging trends in Japanese ramen. We take great pride and joy in our ability to provide the most authentic Japanese ramen. Often referred to as Kurobuta (Black Hog) in Japan, Berkshire pork is prized as much as Kobe beef. Berkshire Pork has been recognized in Japan and around the world for many reasons, but especially for its extraordinary intramuscular marbling and flavor, which are its most distinctive characteristics that conventional farm-raised pigs tend to lack. 100% Berkshire pigs are more expensive than conventional pigs, but if you’re a true fan of pork, Heritage Berkshire is worth every delicious succulent bite.
